Instead of the usual potato salad for your next cookout, try this healthy and filling salad full of summer produce, creamy avocado, and savory grilled chicken. It’s easy to put together and makes a meal all on its own.

Here's a variation to try: Swap shrimp for the chicken; just skewer and grill. You can also use different seasonings — and Italian blend would work nicely with some chopped parsley and lemon juice.
1 pound chicken breast
1 teaspoon chili powder
1 teaspoon cumin
1 pint cherry tomatoes, halved
1 avocado, pitted and halved
1 red onion, diced
Juice of 1 lime
Chopped cilantro, for serving
Sea salt and fresh ground pepper, to taste
- Brush the chicken with olive oil and season with salt and pepper. Grill until cooked through, let cool, and chop.
- Add the chopped chicken to a bowl with the cherry tomatoes, avocado, onion, and cilantro.
- Whisk the oil, seasonings, and lime juice together and toss with the salad before serving.
