Instead of tomatoes for your next Caprese, try peaches for a different take on things. Perfect with creamy mozzarella and basil, this version layers flavorful char-grilled chicken that makes a perfect backyard meal in the summertime.
Prep time: 20 minutes
Make sure your peaches are ripe and unpeeled, and take your mozzarella out of the fridge before you start — it will have a much more mellow, creamy flavor at room temperature.
You may have to get your peaches a few days in advance. Many of the peaches you find at the store are not ripe yet!
2 chicken breasts
1 tablespoon olive oil
2 ripe peaches, pitted and sliced
4 ounces fresh mozzarella cheese, sliced
Fresh basil leaves
Sea salt and fresh ground pepper, to taste
- Preheat a gas or charcoal grill to medium high heat.
- Brush the chicken breasts with oil and season with salt and pepper.
- Grill until cooked through and charred. Let rest slightly.
- Slice the chicken and layer on a plate with the peaches, mozzarella.
