Your Instant Pot turns what once was an all-day cooking session into an hour with this easy chili recipe
Prep time: 40 minutes
This a flavorful blend of beef, tomatoes, and spices has a couple extras that help give it an added depth of flavor. Cocoa powder and cinnamon are usually thought of as dessert ingredients, but here, they add a richness that you can’t quite put your finger on, but you know is good. A tiny bit goes a long way, so don’t try to add more flavor by adding more of either one.
Variations: Ground turkey or chicken is a good substitute for beef here. Instead of regular diced tomatoes, try a fire roasted variety for additional smokiness.
1 pound lean ground beef
1 onion, diced
1 jalapeño, diced
2 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon cumin
4 cups diced tomatoes
2 cups water or broth
1/2 teaspoon cinnamon
1 teaspoon cocoa powder
Juice of 1 lime
Sea salt and fresh ground pepper, to taste
Toppings: diced green onions, sour cream, shredded cheese
- Put the ground beef, onions, jalapeños, garlic, and spices in your Instant Pot and cook until beef is no longer pink. Add the tomatoes, broth, cocoa and cinnamon, and set your Instant Pot to pressure cook for 20 minutes
- Release the pressure and add the lime juice.
- Serve immediately and top with your desired garnishes.
